Borodinski recipe

Lily McCann has published an excellent recipe for a Borodinski loaf which I would like to share with you. We have made some Borodinski-inspired loaves as part of our rye production on a Thursday. But it seems to me that this is a superior recipe. Recommended for those who like rye bread and the flavours of Eastern Europe.Borodinski true loaf

  1. Borodin is a Russian village and the location of the last victory of Napoleon before his defeat in Russia. There are many different varieties of Borodinski around, and you can buy a Borodinski loaf most days at BoroughMarket near London Bridge. Allegedly the Russian general’s wife wanted to do her bit for the battle and the night before baked the best possible bread for the troops so they would be strong in battle. This was the bread she made except it probably took more like two nights to make.
